Meal Planning Monday

Monday rolls in again and with it another new week. We are nearly upon the summer holidays now. I have technically only one week left of my maternity leave, but luckily the summer holidays then start and I have a six week extension!

I had a speedy cake to ice last week to celebrate the royal baby when he arrives. The icing was provided by Renshaw Baking and the rest was up to me.

I used some leftover icing to decorate buns for my daughters dancing class fundraiser. Her song is The Ugly Bug Ball and I made a few ugly bugs to top some buns.

Yesterday, I made some Rhubarb and Custard Muffins and they turned out quite well. I’ll be posting a blog later this week with the recipe.

This is what we are eating this week:

Monday – Freezer dive

Tuesday – fish pie

Wednesday – we’re going to the Great Yorkshire Show so I expect we’ll be freezer diving when we get home again

Thursday – Enchildas for me, pasta for the children

Friday – Roast Chicken

Saturday – BBQ as part of’s charcoal challenge

Sunday – it is Evie’s dancing show so I expect we might have fish and chips on the way home!
