The folk at bakingmad.com sent me an amazing selection of goodies a few weeks back. I will be making some delicious summer recipes in the next few weeks, but here’s a chocolate chip cookie recipe to get you started using the Silver Spoon Caramel Flavour Chocolate drops for the chocolate chips. These chocolate drops can also be melted to top cakes or biscuits or used as decoration.

The original recipe was from allrecipes.com and i have adapted it. The dough is really a thick cake mix so it makes lovely, soft cookies.

Caramel Chocolate Chip Cookies

Caramel choc chip cookies (makes 15)

Ingredients:

115g soft butter or margarine

140g golden caster sugar

half tsp vanilla extract

1 egg

125g plain flour

35g cocoa powder

half tsp bicarbonate of soda

pinch of salt

100g packet Silver spoon caramel milk chocolate drops

Method:

  1. Cream together the butter, sugar and vanilla in a cake mixer with a paddle attachment or beat together in a bowl with a wooden spoon.
  2. Add the egg and mix thoroughly
  3. Sieve in the dry ingredients and mix in without over beating.
  4. Add and mix in the caramel chocolate chips
  5. Spoon 15 big spoonfuls onto baking sheets covered in baking parchment. You can round and flatten the spoonfuls slightly if you want to, or leave them uneven like in this photo if you want to.
  6. Bake in a preheated oven at 160fan/180C for 15 minutes. Allow to cool on the tray for 10  minutes then transfer to a wire rack.
