I have blogged before about my daughters aversion to vegetables, so this pasta came about to get some veg in her! She will eat pasta with vegetable and tomato sauces as long as there are no visible green bits in it though. This is the reason that I peeled the courgettes, I wouldn’t have done this if it was just for me. As usual with one of my recipes, you can put pretty much any veg in that you like and have in.

Here is a simple baked pasta dish that you can prepare ahead and just put in the oven half an hour before teatime.

Vegetable pasta bake (serves 3/4)


100g dried pasta, cooked until just done then drained

1 onion, chopped

1 carrot, diced

1 stick celery, diced

2 courgettes, peeled (optional) and diced

1 tin chopped tomatoes

100g light soft cheese such as Philadelphia

50g grated cheese such as cheddar


  1. Cook the pasta according the the packet instruction, drain and reserve.
  2. Soften the onion, carrot and celery in a large frying pan or wok. Add the courgette and tomatoes and cook for 20 minutes until all are nice and soft.
  3. Turn the heat off and add the soft cheese and stir well until combined completely.. Stir in the pasta and put into an appropriately sized oven proof dish. At this point you could cool, cover and chill for up to 24 hours.
  4. When ready to bake, preheat the oven to 180C/160fan. Put the grated cheese on top and bake for 30 minutes or until piping hot throughout.

    Did she really not spot the vegetables? I have exactly the same problem with getting someone to eat something with any visible veg, though he’s a little bit older than your daughter – about three decades older!

      She doesn’t mind the veg in the tomato sauce as long as they’re not green!
