Chocolate topped orange muffins

I fancied muffins this weekend…I had plenty oranges in the house and a bar of dark chocolate from Lithuania of all places from a #foodiepenpals gift last month so I came up with these muffins – enjoy!

Chocolate topped orange muffins (makes 12)

Ingredients:

260g self raising flour

half tsp baking powder

half tsp bicarbonate of soda

85g golden caster sugar

zest of one orange

juice of one orange

60ml sunflower or vegetable oil

100ml milk

2 eggs

50g dark chocolate, melted

Method:

  1. Preheat the oven to 200C/180fan and line a 12 hole muffin tin with muffin cases.
  2. In a large mixing bowl place the flour, baking powder, bicarbonate of soda, sugar and orange zest in a bowl and mix.
  3. In a jug (for ease of measuring) milk the orange juice, oil, milk and eggs.
  4. Pour the wet ingredients into the dry ingredients and mix thoroughly, but gently until just combined. Do not beat and over mix or the muffins will be tough.
  5. Split between 12 muffin cases and bake for 15-20 minutes until golden.
  6. Cool on a wire rack and when completely cool drizzle with the melted chocolate anyway you please.
