Muffins still warm with melting chocolate chunks

I’ve been fancying some breakfast muffins for a while, so I had a raid of my cupboards and fridge to see what I could make some with and I came up with these.

They are quite naughty as they do contain a bar of chocolate, but it is the weekend. I would quite like them with a handful of raisins or sultanas in instead of the chocolate, but dried fruit is on the list of things that Evie has decided not to eat, and with Rod dieting, I’d end up eating the whole lot myself!

Here’s the recipe! Weekend Treat Breakfast Muffins (makes 12)

175g self raising flour

1 teaspoon of bicarbonate of soda

75g oats

100g dark muscavado sugar

100g bar of any chocolate, broken or chopped into chunks (I used dark chocolate)

zest and juice of 1 orange

175g yogurt (I used a cherry muller light)

50ml vegetable or sunflower oil

2 eggs


  1. Preheat the oven to 190C/170fan. Put 12 muffin cases into a muffin tin.
  2. In a large bowl mix together the flour, bicarb, oats, sugar, chocolate and orange zest.
  3. Mix together all the other ingredients, it is easier to do this in a jug and then you can measure the oil easily.
  4. Pour the wet ingredients into the dry ingredients and mix gently until they are completely combined. Do not beat the mixture or overwork of the muffins will be tough.
  5. Split between the 12 muffin cases and bake for about 25 minutes until they are firm to touch and cooked through.
  6. Cool on a wire rack.
