Meal Planning Monday

Here we are again! How on earth do the weeks whizz round so quickly?

We started the week with our daughter’s fourth birthday, then had a lovely week in Center Parcs and finished with a soft play Sunday morning birthday party, so we’re back to reality this week. We ate and drank as we pleased and had a total break.

We did get home to a broken fridge though, but Rod says it’s had a good run! It moved in here with him 9 years ago and he thinks he had it 9 years before that!

Rod has been dieting for weeks. He has lost 3 stone so far through healthy eating and not drinking so much alcohol. He also stopped smoking too the day after Isaac was born. I am so proud of what he is doing.

So our meals are healthy this week. Again I’ve been to the freezer! You must think it’s a bottomless pit! It does feel a bit like that! I’ve been on a reconnaissance mission and this is what I have found:

  • turkey breast
  • chicken fillets
  • whole chicken
  • stewing beef
  • belly pork joint
  • cod in breadcrumbs
  • one lemon and chive fish portion
  • one small pizza
  • plenty of leftover portions of food

Our meals, therefore, are going to be:

Monday – Freezer dive (I’ll have a leftover portion of something and Evie will probably have pasta with some sauce I have made and frozen)

Tuesday – Homemade turkey breast nuggets (recipe to come) with homemade potato wedges

Wednesday – Beef stew in the slow cooker (need to buy a swede, I have potatoes, onions and carrots already)

Thursday – Roast chicken with salad

Friday – Fried rice recipe

Saturday – Eating out in Leeds with my family

Sunday – Roast dinner (need to buy!)
