Spicy Fried Rice

This is a great recipe to use up store cupboard ingredients, a few bits from the freezer and any bits of veg that need using up too. Don’t worry if you don’t have the ingredients mentioned here; it can easily be adapted to use ingredients you have in or leave out the meat for a nice veggie option too. It is satisfying and tasty on it’s own or as a side dish and can be served hot or cold; it is great as a dish on a party buffet.

Serves 4 as a main meal.

Ingredients:

1 cup basmati (or other) rice

1/2 cup frozen peas

1 tbsp oil

1 onion, chopped

1 chicken breast, cut into 2cm pieces

2 rashers of bacon, cut into 2cm pieces

1 pepper, chopped

6 mushrooms, sliced

1/2 cup cooked prawns

1 egg, beaten

1 tablespoon of curry paste

Method:

  1. Cook the rice until tender and just before the end of the cooking time, throw in the frozen peas and bring back to the boil to defrost the peas and heat them. Drain.
  2. In the meantime, heat the oil in a large wok over a meadium heat. Soften the onion and then add the chopped chicken and bacon. Cook well. Add the peppers and mushrooms and soften.
  3. Now add the prawns and turn up the heat as a lot of water comes out of the prawns and you need to bubble it away.
  4. Lower the heat again and push the contents of the pan to the side. Add the egg to the gap and scramble it. Mix with the rest of the veg and meat and add the curry paste and mix well.
  5. Add the rice and peas and make sure that everything is well mixed together before serving with soya sauce if you want.
