How to make half a cake for when a whole cake would be too much!

Quite often Evie asks to bake. I obviously love baking, but also hate waste, so we sometimes make half a cake!

Sounds tricky? Not at all! Here is what to do; you’ll kick yourself when you know!

I just bake one cake, cut it in half so I have 2 semi-circles, and sandwich one on top of the other!

The recipe I used for this half a Victoria Sandwich is:

Ingredients:

115g Stork baking liquid (or soft butter or marg)

115g golden caster sugar

2 eggs

115g self-raising flour

splash of milk

Jam to sandwich

Method:

  1. Cream the baking liquid or butter with the sugar in a mixing bowl.
  2. Add the eggs and beat in thoroughly.
  3. Sift in the flour and a splash of milk and gently mix until the flour is just combined.
  4. Pour into a greased and lined (just the bottom with baking parchment) 20cm tin and bake for 20-25 minutes until it is firm to touch and lightly golden.
  5. Cool for a few minutes then turn onto a wire rack and leave until completely cold.
  6. Cut the cake in half straight accross so that you have 2 semi-circles. Spread jam onto one half then place the other half on top.
  7. Eat!
