Beetroot Brownies

I visited Kirkstall Abbey on Saturday morning and by accident stumbled across The Deli Market. There was a lot of really interesting stalls there including one from Kirkstall Allotment Owners who were selling their own produce. I bought some beetroots from them, as well as some potatoes and a green cauliflower, and last night decided to look for a recipe which involved beetroot.

I decided to go for a sweet recipe and came across a Beetroot Brownies (http://wp.me/P1rz1B-5w)  recipe on the Good Food Website really easily and thought I’d give it a go.

I took the advice given in the recipe to wear rubber gloves whilst I peeled and chopped the beetroots and was glad as the gloves looked like something from Sweeney Todd!

The mixture of the cooked beetroots, chocolate and butter didn’t look great…

But the completed mixture just looked like any other cake mixture…

 Just out of the oven, the cake had a lovely pinky brown tinge…

And they tasted lovely warm with ice cream!
